Blueberry PANCAKES & Hot Strawberry Sauce

Shopping LIST:

 

50g oat bran, 125g flour, 40ml soya milk, 2 eggs, 1 drop vanilla flavour, 1tsp baking powder, 125g fresh blueberries.

For Sauce:  250g frozen strawberries, 1 tbs sugar, butter for frying.


Method:

  • Combine 50g oat bran and 125g flour in a blender, then add 40ml soya milk, 2 eggs, 1 drop vanilla flavour and 1tsp baking powder. Blend for 30 seconds, then add 125g blueberries and blend again for a few more seconds.
  • Melt 1 spoon butter in a frying pan and pan-fry tablespoons of the batter to make the pancakes, turning them over when the mixture forms bubbles on the surface.

 

  • To make the hot strawberry sauce, cook 250g frozen strawberries and 1 tablespoon sugar, gently in a saucepan until the strawberries soften. Pour the sauce over the blueberries pancakes and enjoy.
