Soft Chocolate Cookies

Shopping LIST:

 

60g good quality dark chocolate, 70ml sunflower oil, 150ml almond milk, 90ml maple syrup.

 

145g all-purpose flour, 45g good quality cocoa powder, ¼ tsp ground cinnamon and ¾ tsp baking powder, ¼ tsp sea salt.


Method:

  • Melt 60g good quality dark chocolate, broken into pieces, in a heatproof bowl set over a pan of barely simmering water. Take care not to let the underside of the bowl touch the surface of the water.

 

  • In a large mixing bowl, whisk 70ml sunflower oil, 150ml almond milk and 90ml maple syrup. Add the melted chocolate.

 

  • Preheat the oven to 160°C fan and line with parchment paper a baking sheet.

 

  • Sift 145g all-purpose flour, 45g good quality cocoa powder, ¼ tsp ground cinnamon and ¾ tsp baking powder directly in the bowl containing the liquid ingredients. Add ¼ tsp sea salt and use a spatula to incorporate all the ingredients into a smooth batter.

 

  • Use a tablespoon to make rounded shapes onto the prepared baking sheet. Bake for 12 minutes.

 

  • Remove from the oven, slip the parchment paper with cookies onto the kitchen counter and let cool.
