Chocolate Chunks Cookies

Shopping LIST:

 

100g softened butter, 50g coconut oil, 80g brown sugar and 40g granulated sugar, 2tsp vanilla extract, 1 egg.

225g flour, ½ tsp bicarbonate of soda, ¼ tsp salt, 135g dark chocolate chunks.


Method:

  • Preheat the oven to 170°C fan and line with parchment paper two baking sheets.

 

  • Put 100g softened butter, 50g coconut oil, 80g brown sugar and 40g granulated sugar into a bowl and beat until creamy.

 

  • Beat in 2tsp vanilla extract and 1 egg.

 

  • Sift 225g flour, ½ tsp bicarbonate of soda and ¼ tsp salt into the bowl and mix it in with a wooden spoon. Add 135g dark chocolate chunks and stir them in.

 

  • Use a teaspoon to make rounded shapes onto the prepared baking sheet.

 

  • Bake for 8 minutes until they are light brown on the edges and still slightly soft in the centre.

 

  • Remove from the oven, slip the parchment paper with cookies onto the kitchen counter and let cool.
